Macaroni and Cheese is one of my favorite meals to eat and one of my favorite dishes to make. It is one of my favorite dishes to make because it is super easy and you can tweak the recipe to kick up the flavors by adding different cheeses and even bacon (other meats work well too) which I have been known to do.
- 2 12-ounce cans of Evaporated Milk
- 3 cups of cheddar cheese (you can use any cheese you want. I like extra sharp cheddar)
- ½ cup of Velveeta cheese
- 1 block of cream cheese (optional)
- ½ teaspoon of salt or to taste
- Sprinkling of black pepper or to taste
- 1 box of your favorite pasta
Fill a medium or large saucepan half way with water (Make sure to salt your water) give it a stir and bring to a boil. Once boiling, add your pasta and let it boil for about 7 to 10 minutes. How long you cook it depends on how you like your pasta cooked. I like mine a little under cooked or Al Dente (still has a bit of tooth to it). When your pasta is done, drain any excess water and add the 2 cans of evaporated milk and bring to a light simmer. Once the evaporated milk starts to bubble turn off the heat, add all of your cheese and stir until all the cheese is melted. Once the cheese is all melted, throw in your salt and pepper and give it one more stir.
A Note About this Macaroni and Cheese
This macaroni and cheese recipe is super easy to make and super delicious. Once you give the base recipe a try, don’t be afraid to add different cheeses and different spices. Sometimes I will add ground beef to this, put it in a baking dish, sprinkle bread crumbs on top and bake. I have myself a nice macaroni and cheese casserole.
